10 ripe, yellow tomatoes, cored, seeded, peeled and chopped in large chunks
1 clove garlic
1 yellow pepper, diced
1 red pepper, diced
1 English cucumber, seeded, peeled and diced
1 red onion, diced
2⁄3 cup day-old baguette, diced
1⁄3 cup extra virgin olive oil
3 Tbsp. sherry vinegar
DIRECTIONS:
Place chopped tomatoes, garlic, onions, bread and half of the peppers and cucumbers in a food processor. Pulse until mixture has uniform, chunky texture.
Add half of the olive oil and adjust seasoning to taste with salt.
Add remaining peppers and cucumbers and garnish with sherry vinegar and remaining olive oil.
